The Vegan Table: Chai-Spiced Almond Cookies

Exciting!  Jumping into the winter recipes!

I am starting it off with this recipe (update: Google book preview removed this content, please follow links below to other’s blogs for their version of the recipe).  I followed the recipe closely the first time, only switching the vegan butter with coconut oil, then I thought I only made 15 little cookies, I might as well make some more!  But I ran out of roasted almonds so I started using unroasted walnuts instead and made only 12.  The recipe says it would make 20.

Results?  Well, I personally like walnuts better in there.  I also think the spice is a little strong for me, maybe it was supposed to go with tea?  But it does resemble the chai (tea) a lot.  Maybe I am not supposed to have too many at once that is why the recipes only made about 15 little ones.
