I made these awhile ago, but today I decided to use up the walnuts I have lying around.
Anyhoo, so I triple the recipe, using only 1 cup of walnuts, and I used an even mixture of flours, Bob’s Red Mill Whole Wheat Pastry (coarsely ground), Bob’s Red Mill Unbleached White, and Bob’s Red Mill Whole Wheat (finely ground). I also used 3/4 cup + 1 tablespoon of grape seed oil and 1 tablespoon of water.
They turned out great again. I wanted them to be a little firmer and they were so I added the water, and indeed, firmer! I made about 30 cookies.
