The Vegan Table: Roasted Asparagus Soup With Thyme

I just wanted to try this out, I didn’t know how this would turn out.  It turned out fine!  And I liked the asparagus on the side.  I think without the asparagus, it’d probably be hard to tell that it’s asparagus soup.

I modified the recipe a little with the addition of baby bella mushrooms and substituted toona for, yes again, onion, garlic, and leek.  So there!

      Thanks! I really love The Vegan Table cookbook, it has so many recipes that are just right, not too many ingredients, not too easy, not too difficult. And it’s even categorized into seasons!
