The Vegan Table: Roasted Red Pepper, Artichoke, and Pesto Sandwiches & Panini With Lemon-Basil Pesto

I made these two together because they were very similar.

You can see, they were very similar.  I didn’t use the avocado in either, but they were flavorful enough, not to mention the colors!  Lemon-basil pesto on the left, and the roasted red pepper, artichoke, and pesto on the right.

I didn’t use onion, as usual.  They were both delicious!  I like mixing the pesto with lemon juice, it had an interesting effect on the pesto, it became more like a pesto-mayonnaise than pesto.

For some reason, a lot of people blogged about the panini with lemon-basil pesto…  And none blogged about the roasted red pepper, artichoke, and pesto sandwich.  In any case, people loved the panini with lemon-basil pesto!
