Bamboo Shoots, Rice, and Mushrooms (Rice Stuffed Bamboo) 竹筒飯

When I was young, I would go on hikes with my family.  Sometimes we would sit down in a restaurant in the mountain and have rice stuffed bamboo or 竹筒飯 (zhu tong fan; ㄓㄨˊ ㄊㄨㄥˇ ㄈㄢˋ ).  As there was usually meat in there, I haven’t had it for years (and we don’t have it in the U.S.)…  That is until my sister got bamboo shoots from Santa Barbara’s farmers market.

Farmers markets are so wonderful!  They have so many things that you can’t really get anywhere else!  I know this doesn’t look like it, but this is actually a bamboo shoot!  Not a mature bamboo section!  So basically I just stuffed rice in this bamboo and then stuffed mushroom on top of the rice and steamed it.  They actually should look something like this.  You can also season it with soy sauce and pepper and other mushrooms like shiitake.

Bamboo shoots are only available in winter and spring, very seasonal.  I usually avoid buying imported bamboo shoots because the pesticide use is just too scary.

Anyhoo, this is so nostalgic.  And it was fun to play with!
