The Vegan Table: Basil Eggplant

Finally, the second to last of the summer recipes I am going to make from The Vegan Table!

This recipe is actually quite fast, but I would suggest either cut the eggplant to smaller pieces or let the eggplant sit for about an hour before digging in because mine didn’t really soak up the flavor until the next day, hehe, oops?

After the eggplant soaks up the flavor, it was very good!  I was at first sad that the eggplant did not have much flavor, but I was happy to know the next day that it was okay! I used soy sauce and didn’t use any garlic.
