The Vegan Table: Spring Vegetable Risotto

Finally back to the spring recipes!  I made the risotto, but it seemed like the vegetables were too much for the amount of rice called for in the recipe…  Although the risotto was delicious.

Instead of garlic and scallions, I used toona.

Although it is a simple recipe, it takes some preparation, so it is best to have everything ready before you start to cook the rice.
