Vegan Cupcakes Take Over The World: Golden Vanilla Cupcakes

Okay, I know, I am supposed to keep to the seasonal recipes and finish the cookbook before I buy another cookbook…  But I wanted some dessert I have made before to bring to the potluck.

I eat these like cookies…  One after another, they are good even without any frosting…  I just like them the way they are!  I only used 1/4 cup of grape seed oil instead of the 1/3 cup canola oil called for by the recipe.

Anyhoo, obviously other people have done things to these cupcakes, but very positive reviews from all over!

  1. Funny, I’ve made so many cupcakes from that book (my faves are coconut lime and pistachio rosewater) but I’ve never made the vanillas! They look great.
