Cheesecake Challenge Results

I think I’m successful in making the cupcake-sized cheesecake.  Now I have to think about what to do with the frosting on top.  I think it is now safe to say, I am no longer vegan cheesecake-challenged.

Vegan Key Lime Cheesecake with Walnut (preparation: 20 minutes, make ~15 cupcake-sized)

Walnut portion:
1 cup walnut
1 cup wholewheat flour
2 tbsp brown sugar
pinch of salt

Cheesecake portion:
1 pack of 19 oz firm tofu (from Trader Joe’s)
8 1/2 tbsp brown sugar (= 1/2 cup + 1/2 tbsp, if you want your cake a little whiter, use white cane sugar)
1 whole lime (if you don’t really want it so limey, you can just put 1 1/2 tbsp of just lime zest)
1 1/2 tbsp apple cider vinegar
1 tsp vanilla
1/4 tsp seasalt
2 tsp agar agar

First line the cupcake molds with cupcake cups
Use a food processor, blend the walnut into crumbs that stick together easily when you press on it, but don’t over-blend it, we don’t want walnut butter here
Take out the walnut from the food processor and mix in flour, sugar, and salt
Put a spoonful of walnut mixture into the cupcake cups and press down until walnut mixture sticks together and makes a flat bottom

For the cheesecake, open the up the tofu and drain the water
While waiting for the tofu to drain, take the lime and squeeze them until they are soft (or just get some lime zest for a less limey experience)
Cut open the lime and squeeze out the lime juice and get rid of any seed
Now, chop the lime peels into strips and put them into the blender
Put the tofu and the rest of the ingredients into the blender and blend it thoroughly
Preheat the oven to 325F
Put the tofu mixture into the cupcake cups to 2/3 full but not too full
Then bake them for 25 minutes
After 25 minutes, turn off the oven and let them sit there for another 20 minutes
Cool them completely before refrigeration
